Coconut Rice is staple in south indian home.Be it a lunch box or a special occasion,coconut rice comes in handy and easy to put together.Last week i was prepping for making coconut rice and i saw a bunch of fenugreek leaves sitting in my fridge.So decided to pair these two made a tasty rice.It came out really good my hubby who was not so fond of greens didnt have a clue and ate all up. Try this and you will be hooked.I have tried with mango rice and it came really good.
1.Rice : 2 cup(cooked)
2.Coconut : 1 cup Grated(Fresh or Frozen)
3.fenugreek Leaves : 1/2 bunch(Pluck leaves wash and cut)
4.Jeera : 2tsp
5.mustard Seeds :1tsp
6.Ginger : 1tsp grated
7.Green chilli : 1 slit lenghtwise
8. Pepper Powder : 1/2tsp
9.Red Chilli : 1
10.Ghee/Oil : 1tbsp
11.Coriander Leaves : a few(for garnish)
12.Curry Leaves : a few
13.Salt : as taste
In a kadai,heat oil/ghee,add the mustard seeds,Jeera Seeds.
When it crackle,lower the heat and add the red chilli,ginger,green chill,curry leaves and asafoetida.Fry for 30 secs.
Add the fenugreek leaves and fry till it wilts.
Add the grated coconut and fry till it gives a nice aroma and add the pepper powder.
Add the rice, salt and mix well.
Adjust the salt and pepper and enjoy!!
Keep the ingredients ready when you start heating the kadai.
Best paired with roasted potatoes and chips.
I served with potatoes and dal.
